1. Your restaurant/role:
I am Culinary Director at The Grand Hotel in the city of Birmingham.

2. Describe your kitchen:
I’m lucky as I have three brand new kitchens to work in, designed by myself!

3. Favourite Chef Works item and why?
I have both Chef Works core collection pieces and sustainable too! I love my Bristol Chef Coat from their main collection, then myself and team also wear their sustainable range made from recycled plastic bottles – how cool is that!

4. First job:
I worked in the markets from the age of 14 and absolutely loved it!

5. Favourite cookbook:
A Passion for Flavour by Gordon Ramsay.

6. Your awards/career highlights:I was nominated for a Catey award back in 2014 and was on the front cover of The Caterer.

7. Weirdest thing you ever ate:
Sea Urchins in Spain.

8. Favourite ice cream flavour:
Honeycomb – delicious!

9. Favourite family recipe:
A good old Chilli Con Carne with Crème Fraîche.

10. Favourite wine:
Champagne.

11. Who would you most like to cook for?
I would have loved the opportunity to cook for Donald Campbell, the land and sea speed record breaker and Captain Robert Falcon Scott, explorer of the Antarctic. Both were boyhood heroes of mine.

12. Who would you least like to cook for?
Boris Johnson.

13. Favourite things to do when not cooking:
Getting outdoors, riding bike!

14. Your latest project?
The Grand Hotel, Birmingham.

15. Favourite city?
Edinburgh without a doubt!

16. And finally, your all-time best culinary tip:
Don’t just follow a recipe, learn and understand it!
