5. Your cookbook: “How to cook with Kahoonas” – Any publishers out there?

6. Your awards: 7th Grade Best Improved Award for Drama – I played a tree.

7. Your cooking inspiration: The singlet-wearing dude with the rice roll kart when I was 4 – fresh rice rolls with peanut sauce, sesames, sweet sauce and chili paste and the aroma of Kerosene from his stove.

8. Your specialty dish: Braised Short Rib (grass-fed of course) Tempura with Soy Caramel.

9. Favorite dish to eat: Chiu Chow flat noodles with pig’s trotters and ox tripe (I also secretly love sweet and sour pork/mystery meat).

10. Weirdest thing you ever ate: Deep fried tarantula legs in Cambodia. The grossest: anemic shark flesh in Iceland.

11. Favorite ice cream flavor: Yakult flavor.

12. Favorite drink: Hong Kong-style ice milk tea – AKA stocking milk tea.

13. Favorite wine: Vin Jaune by Frédéric Lornet of Jura, France.

14. Who would you most like to cook for: My Wife and Catherine Tate, the British comedienne.

17. Your latest project: Bang Bang Pan Pan II and continuing with my radio and television shows in Hong Kong including Food and Culture II and NOW TV – Chef Corner III.

18. Favorite city and why: Hong Kong – I love my city, we are rude and shallow and we embrace this as part of who we are.
